Hot Chocolate

Ingredients:

  • 8 oz milk

  • 2-3 tbsp cocoa powder or chocolate syrup

  • 1-2 tsp sugar, or other sweetener, (optional)

Method:

  1. Froth the milk with your espresso wand, steaming it until it reaches about 150°F (65°C).

  2. In your cup, mix the cocoa powder or chocolate syrup with a little hot water to form a smooth paste.

  3. Once the milk is frothed, pour it into the chocolate mixture, stirring gently.

  4. Add sweetener to taste.

Chai Latte

Ingredients:

  • 1 shot of espresso (optional, for a dirty chai)

  • 1 cup of brewed chai tea or chai concentrate

  • 8 oz steamed milk

  • Optional: Sweetener like honey, sugar or artificial.

Method:

  1. Brew a strong cup of chai tea or use chai concentrate (mix concentrate with water or milk, following package directions).

  2. Froth the milk with your espresso wand, steaming it until it reaches about 150°F (65°C).

  3. Pour the chai into a cup (add espresso if you want a dirty chai).

  4. Slowly pour the frothed milk into the chai.

  5. Optionally, sweeten to taste.

Matcha Latte with Spiced Milk

Ingredients:

  • 1 tsp matcha powder

  • 1 shot of hot water (about 2 oz)

  • 8 oz milk (whole, oat, or almond)

  • 1/4 tsp ground cinnamon

  • 1/4 tsp ground ginger

  • Optional: Sweetener like honey or maple syrup

Method:

  1. Sift 1 tsp of matcha powder into a bowl or cup to avoid clumps.

  2. Add 2 oz of hot water (around 170°F / 77°C) to the matcha powder and whisk until smooth and frothy, using a traditional bamboo whisk or a small handheld frother.

  3. In a small saucepan, combine the milk with cinnamon and ginger. Heat the milk mixture over medium heat, stirring occasionally.

  4. Froth the spiced milk mixture using your espresso wand until it reaches around 150°F (65°C).

  5. Pour the matcha mixture into your cup, then pour the steamed spiced milk over the matcha.

  6. Optionally, sweeten with honey, maple syrup, or your preferred sweetener.​​

Tips for Spiced Milk:​

  • Infuse Spices First:
    Unlike just frothing milk, you'll want to heat and infuse the spices into the milk before frothing. This ensures the flavors meld together and are fully absorbed by the milk.

  • Don't Boil:
    Be careful not to boil the milk, as it can burn and create an undesirable texture. Aim for about 150°F (65°C).

  • Whisk or Stir the Spices:
    Spices like cinnamon and cardamom can sometimes clump. Stir them well into the milk before heating or use a small whisk to help them dissolve.

  • Experiment with Spice Quantities:
    If you're new to spiced milk, start with small amounts of spice and adjust to taste. Spices like cinnamon and nutmeg can be strong, so it's easier to add more than to tone down an overpowering spice.

  • Use Sweeteners:
    Depending on the drink, adding a sweetener like honey, maple syrup, or sugar can enhance the flavor and balance the spices.
    I avoid artificial sweeteners as much as possible and use Monk Fruit instead.

  • Froth with the Wand:
    Once the milk is spiced and heated, use your espresso wand to create smooth, velvety microfoam. If you want a creamier texture, froth it for a little longer.

Pumpkin Spiced Latte

Ingredients:

  • 1 shot of espresso

  • 8 oz milk

  • 2 tbsp pumpkin puree

  • 1-2 tsp pumpkin spice

  • 1-2 tbsp sweetener (like brown sugar or maple syrup)

Method:

  1. Brew your shot of espresso and set it aside.

  2. In a small saucepan, heat the milk with the pumpkin puree and pumpkin spice until warm.

  3. Froth the milk mixture with your frothing wand until it’s creamy and frothy.

  4. Add the sweetener to the espresso, then pour the spiced milk mixture over it.

  5. Optionally, sprinkle a little extra pumpkin spice on top.

General Tips for Using the Wand
  • Temperature:
    Don’t let the milk get too hot; steaming to around 150°F (65°C) is ideal. Any hotter and the milk may burn or become too sweet.

  • Frothing Technique:
    Position the steam wand just below the surface of the milk to create foam, then submerge it to heat the milk. Practice controlling the steam to get the right texture.

  • Milk Type:
    Whole milk creates the richest froth, but alternatives like oat milk or almond milk can also work well (though they may froth differently).
